1- Creamy Spinach Dip

Ingredients

1 small shallot, peeled

1 tablespoon of walnuts

1/4 cup reduced-fat cream cheese

1/4 cup low-fat cottage cheese

1/4 cup nonfat plain yogurt

1 tablespoon lemon juice

1/2 teaspoon salt

Freshly ground pepper, to taste

6 ounces baby spinach

2 tablespoons chopped fresh chives

Preparation

Pulse shallot and walnuts in a food processor until coarsely chopped. Add cream cheese, cottage cheese, yogurt, lemon juice, salt and pepper and pulse until just combined. Add spinach and chives and pulse until incorporated.

2-  Feta and Herb Dip with Crudités

Ingredients

1 can(s) white beans, rinsed

3/4 cup(s) nonfat plain yogurt

1/2 cup(s) crumbled feta cheese

1 tablespoon(s) lemon juice

1 teaspoon(s) garlic salt

1 teaspoon(s) freshly ground pepper

1/4 cup(s) chopped fresh parsley

1/4 cup(s) chopped fresh dill

1/4 cup(s) chopped fresh mint

1/4 cup(s) chopped fresh chives

Directions

Place beans, yogurt, feta, lemon juice, garlic salt and pepper in a food processor and puree until smooth. Add herbs; puree until incorporated. Chill until ready to serve

3-  Cucumber Yogurt Dip with Dill

Ingredients

1 cup low-fat plain yogurt

1 finely chopped fresh cucumber

1/2 tbsp. finely chopped fresh dill

2 cloves minced garlic

1 tbsp. olive oil and freshly ground black pepper

Instructions

In a serving bowl, place the low-fat plain yogurt. Add the finely chopped fresh cucumber, then add finely chopped fresh dill and the  minced garlic, tbsp. olive oil and freshly ground black pepper. Whisk to combine. Chill for up to four hours, and serve with vegetables like, celery, broccoli, cauliflower, bell peppers and squash
