Zerde Sweets-Healthy Dessert Recipe for Ramadan

During Ramadan, it’s a famous Kuwaiti tradition that after futoor the family gathers around for tea and sweets. Zerde (Saffron pudding) is one of the most enjoyed sweets, it has good carbohydrates and fats that will sustain your blood glucose level throughout the night.

Ingredients:

  • 1 cup of brown sugar
  • 5 cups water
  • 1/3 cup of rice
  • ½ teaspoon of saffron
  • 3 tablespoon cornstarch
  • 1 tablespoon raisans
  • 3 tablespoon rose water
  • 2 tablespoon pine nuts
  • 2 tablespoon pomegranates
  • 2 tables spoon pistachio

 Recipe:

  • Soak the saffron in ½ cup of hot water for 20 minutes and soak currant for 15 minutes, drain the raisins and set  it aside
  • Place the rice with remaining water in a medium sized saucepan and bring it to boil. Simmer the mixture for about 30 minutes until thickened
  • Add the soaked saffron and its water then simmer for about 5 minutes or until the pudding is thickened
  • Pour  the pudding into small cups topped with currants , pine nuts, pomegranate and pistachio, then leave it to cool at room temperature for at least one hour before serving
  • Serve  4 cups or more
